Chopped salad in a jar
Ingredients
- 1/3 cup bulgur wheat
- 1 tablespoon Dijon mustard
- 1 tablespoon white balsamic vinegar
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 3 tablespoons olive oil
- 1 can (15 ounces) chickpeas rinsed and drained
- 4 ounces cooked turkey breast cubed
- 4 ounces mozzarella cheese cubed
- 1/2 cup grape tomatoes quartered
- 1/2 cup chopped English cucumber
- 1/4 cup chopped red onion
- 6 tablespoons chopped mixed nuts
Equipment
- mason jars
- cutting board
- saucepan
- whisk
Directions
- Bring 1 cup water to a boil in a medium saucepan over medium-high heat. Stir in the bulgur, turn the heat to medium, and cook for about 10 to 12 minutes, until tender. Pour off any extra liquid, spread the bulgur in a single layer on a rimmed baking pan, and freeze for about 10 minutes until cool.
- Whisk the mustard, vinegar, salt and pepper together in a small bowl. Whisk constantly as you slowly drizzle in the oil until blended.
- Share the vinaigrette among 4 pint-sized mason jars. Spoon the cooled bulgur evenly over the vinaigrette. Add the other ingredients as layers in the order they are listed, ending with the nuts, then close the lids.
