Notes

Pat chicken, fish, shrimp, pork chops, potatoes, or vegetables dry and sprinkle generously just before cooking: about 1 teaspoon per pound for chicken or heartier proteins, 1/2 to 3/4 teaspoon per pound for thin fish fillets. Milder version: reduce cayenne to 1/2 teaspoon. Airtight, cool, dry, dark; up to 6 months; replace if dull, clumped, or faded; use a dry spoon.
