Ingredients

  • 1 cup bread crumbs
  • 1/2 cup grated Romano or Parmesan cheese
  • 1/4 cup chopped parsley
  • 2 tablespoons oregano
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Equipment

  • zip-top bags

Directions

  1. Put all the ingredients in a large zip-top bag.
  2. Close it and shake until evenly mixed.
  3. Coat chicken, turkey, or pork right before baking; the batch coats about 2 to 3 pounds of meat.

Notes

Dry mix airtight, cool, dry, up to 6 months. Discard leftover coating that touched raw meat. Refrigerate cooked meat within 2 hours; use within 3 to 4 days. Food safety: for pantry storage, use shelf-stable grated cheese and dried parsley; if the cheese is freshly grated or the parsley is fresh, refrigerate the mix.
