Ingredients

  • ½ cup chili powder
  • ¼ cup hickory flavored salt
  • 3 tablespoons onion powder
  • 2 tablespoons cumin
  • 1 tablespoon paprika
  • 1 tablespoon garlic
  • 1 tablespoon brown sugar
  • 1 teaspoon cayenne pepper
  • ½ teaspoon dry mustard
  • ½ teaspoon lemon zest

Equipment

  • zip-top bags
  • airtight jar

Directions

  1. Put all the ingredients in a zip-top bag, close it, and shake until the color is uniform.
  2. Pour into a clean spice jar or small bottle with a tight-fitting lid.
  3. To use, sprinkle over chicken, pork, beef, or potatoes right before cooking, or rub it on with a little oil. For larger cuts, season about 30 minutes ahead.
  4. Keep airtight in a cool, dry cupboard away from heat and sunlight; use within 6 months.

Notes

Use garlic powder and dried lemon zest; fresh zest would add moisture to a stored dry mix.
