Ingredients

  • 2 pasta lasagna sheets
  • ¾ cup (6floz/180g) water
  • 1 teaspoon olive oil
  • 3 tablespoons pizza sauce
  • 4 tablespoons ricotta cheese
  • 3 tablespoons spinach uncooked
  • 2 tablespoons cooked sausage optional
  • 1 tablespoon grated cheddar cheese

Equipment

  • mug

Directions

  1. Snap the pasta sheets into pieces and drop them into a large microwave-safe mug.
  2. Pour in the water and olive oil (this keeps the pasta from sticking).
  3. Microwave about 3 to 4 minutes until tender, stirring halfway through. Drain.
  4. Spoon 1 tablespoon pizza sauce into the bottom of the mug.
  5. Add layers of pasta, spinach, sausage (if using) and ricotta, repeating until the mug is almost full.
  6. Finish with the grated cheddar.
  7. Microwave about 2½ to 3 minutes until hot all the way through (keep an eye on it so it doesn’t overflow; times vary with wattage).
  8. Let it cool for a couple of minutes before eating.

Notes

Use a large mug, since the water can bubble up. Layers can be assembled in advance (keep refrigerated — contains ricotta and sausage). Oven option: 350°F (180°C) about 10 to 12 minutes, checking after 10.
