Ingredients

  • 1 cup freeze-dried sausage crumbles (or sausage-flavored TVP)
  • 2 cups dehydrated hash brown potatoes (Idaho Spud brand is recommended)
  • 1/2 cup cheese powder
  • 1/3 cup sour cream powder
  • 1 tablespoon dry minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Equipment

  • mason jars
  • 9×13-inch pan

Directions

  1. Add the ingredients to a clean wide-mouth quart jar in the order listed, giving it gentle shakes so the powders settle.
  2. Put on a lid, then vacuum seal with a FoodSaver wide-mouth attachment, or drop in an oxygen absorber before sealing.
  3. Put on the ring, label the jar with the cooking instructions, and keep it somewhere cool and dry.

Notes

To cook: preheat oven to 375°F. Empty the jar into a large casserole dish; add 5 cups boiling water. Cover and let sit 10 minutes, then bake uncovered about 35 minutes, stirring every 10 to 13 minutes, until bubbly.
With Augason Farms potato shreds: use 6 cups boiling water, bake covered at 350°F for 1 hour, then uncover and bake 5 to 10 minutes more if still soupy.
Shelf life: up to 10 years if the seal stays intact. After opening, refrigerate and use within a week; without refrigeration, use within 24 hours.
Safety: freeze-dried sausage, cheese and sour cream powder can go rancid; opened jar must be refrigerated.
