Ingredients

  • 1/2 cup pasta (fusilli, macaroni or other small pasta shape)
  • 1/2 cup water
  • 3 tablespoons low-fat milk
  • 2 tablespoons pumpkin puree
  • Pinch kosher salt
  • 1/2 cup shredded low-fat cheese

Equipment

  • mug

Directions

  1. Microwave the pasta with 1/2 cup water in a 16-ounce mug for 1 1/2 to 2 minutes, pausing a few times toward the end to stir so it doesn’t boil over.
  2. Stir in the milk, pumpkin puree and salt. Microwave 1 to 2 minutes longer, stirring now and then, until the pasta is al dente.
  3. Cover and let it rest 3 to 5 minutes.
  4. Mix in the cheese, cover, and let it melt for 1 to 2 minutes. Eat right away, or pack it in an insulated lunch container.

Notes

It keeps thickening the longer it sits. Opened pumpkin puree must be refrigerated.
