  • ⅛ tsp salt
  • ⅛ tsp black pepper
  • ⅛ tsp garlic powder
  • 2–3 Tbsp shredded cheddar
Bowl
  • 2 cups chopped lettuce
  • 5–6 cherry tomatoes halved
  • ¼ cup sliced red onions
  • 4–5 pickle slices chopped

Directions

  1. Heat the oven to 425°F. Cut the potatoes in half and toss them with the 1 tablespoon of oil, ¼ teaspoon of garlic powder, salt, and pepper. Roast on a rimmed baking sheet for 20 to 25 minutes, until golden and tender.
  2. Blend all the sauce ingredients in a small food processor until smooth.
  3. Heat the ½ tablespoon of oil in a 10-inch skillet over medium heat. Add the beef with its salt, pepper, and garlic powder and cook for 8 to 10 minutes, breaking it up, until browned. Sprinkle the cheddar over the beef and cover the pan for a minute to melt it.
  4. Put the lettuce and tomatoes in a bowl. Top with the potatoes, cheesy beef, red onion, and pickles. Spoon the sauce over just before eating.
