Mini Irish Soda Bread
Ingredients
- 1 cup all-purpose flour
- 1½ teaspoons granulated sugar
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 1 tablespoon cold salted butter diced
- ¼ cup raisins optional
- 1 large egg yolk
- ½ cup buttermilk
Equipment
- mixing bowl
- baking sheet
Directions
- Heat the oven to 425°F. In a bowl, stir together the flour, sugar, salt, and baking soda.
- Work in the cold butter with your fingertips until it looks like coarse crumbs. Stir in the raisins, if using.
- In a small bowl, beat the egg yolk and buttermilk. Stir it into the flour mixture just until a dough forms.
- Turn the dough out onto a lightly floured counter, knead it a few times, and shape it into a round loaf about 4 inches across. Dust with a little flour if it’s very sticky.
- Set the loaf on a baking sheet and cut a cross about ½ inch deep into the top with a sharp knife.
- Bake for about 40 minutes, until browned and it sounds hollow when you tap the bottom. If it browns too fast, cover it loosely with foil. Let it cool before slicing.
