Ingredients

  • 1 medium zucchini
  • 1 salmon fillet (4 oz)
  • 1 tbsp olive oil divided
  • ½ tsp salt divided
  • ¼ tsp coarsely ground black pepper divided
  • Fresh lemon juice for serving

Equipment

  • cutting board
  • chef’s knife

Directions

  1. Turn the toaster oven to broil. Lightly oil the toaster oven tray, or line it with foil and oil the foil.
  2. Trim the zucchini and cut it into ½-inch pieces.
  3. Pat the salmon dry and set it skin side down on the tray. Drizzle with ½ tablespoon of the oil and sprinkle with half of the salt and pepper.
  4. Spread the zucchini around the salmon in a single layer and toss it with the rest of the oil, salt, and pepper.
  5. Broil for 7 to 10 minutes, checking early, until the salmon flakes easily and the thickest part reaches 145°F.
  6. Squeeze lemon juice over the salmon and zucchini and let it rest for 2 to 3 minutes before serving.
