White Bean Soup for One
Ingredients
- 1 slice bacon cut into ¼-inch strips
- 1 teaspoon olive oil (optional, if bacon drippings are insufficient)
- ¼ cup chopped onion
- 1 clove garlic minced
- ¼ teaspoon dried rosemary
- ⅛ teaspoon coarsely ground black pepper
- 1 (15.5-ounce) can cannellini or other white beans rinsed and drained
- ¾ cup low-sodium chicken broth
Equipment
- saucepan
Directions
- Cook the bacon in a 2-quart saucepan over medium-high heat until crisp. Move it to a plate to use as a topping.
- Cook the onion in the bacon drippings for 3 minutes, until soft. If the pan looks dry, add the teaspoon of olive oil first.
- Stir in the garlic, rosemary, and pepper and cook for 1 minute.
- Add the beans and broth. Bring to a boil, then lower the heat and simmer for 15 minutes.
- Mash some of the beans against the side of the pan to thicken the soup. Ladle it into a bowl and top with the bacon.
