Ingredients

  • 2 c yellow mustard
  • 2/3 c white vinegar
  • 1 c dark brown sugar
  • 1/4 c molasses
  • 1/2 c onion grated
  • 1 tbsp olive oil
  • 2 tbsp worcestershire sauce
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1 tsp liquid smoke (optional)
  • 1/2 tsp cayenne pepper

Equipment

  • saucepan
  • whisk

Directions

  1. Warm the oil in a large saucepan over low heat. Add the onion and half the salt and cook for about 5-6 minutes, until translucent and soft (do not let it crisp).
  2. Add the mustard, vinegar, Worcestershire, and molasses and stir, then add the brown sugar and spices. Whisk well and simmer on low for 35-45 minutes, stirring often so it does not stick.
  3. Let it cool, then pour through a fine-mesh strainer to take out the onion.
  4. Use right away, or keep in a glass jar with a lid in the fridge.
