Ingredients

  • 1 cup ketchup
  • 1-2 tablespoons prepared horseradish or more if you like it spicy
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1/4 teaspoon fine sea salt
  • Dash of finely ground black pepper

Equipment

  • fine sieve
  • mixing bowl

Directions

  1. Press the horseradish against a fine mesh sieve with the back of a spoon to squeeze out the moisture.
  2. Mix the drained horseradish with the ketchup, lemon juice, Worcestershire, hot sauce, salt, and pepper.
  3. Stir well. Serve right away, or chill for 1 hour for the best flavor.

Notes

Prep 5 minutes. Can be made 3-5 days ahead; the flavor improves as it chills. After a day or more it may need a little more lemon juice or salt. If it gels when cold, let it sit 10-15 minutes at room temperature and stir. Can be frozen in small batches (bags or ice cube tray); no freezer time given. Mild: 1 tablespoon horseradish; spicy: up to 3 tablespoons; none: add extra hot sauce and lemon juice.
