Notes

Storage: about 6 months airtight (all-purpose); about 4 months for the gluten-free version (well sealed, certified GF baking powder). Zucchini muffins: 2 cups mix, 1 cup shredded zucchini lightly squeezed, 1 egg, ⅓ cup oil or melted butter, ¼ to ⅓ cup milk, 1 teaspoon vanilla, ½ teaspoon cinnamon; rest 5 minutes; 375°F for 18 to 22 minutes.
