  • 4-1/2 teaspoons ground cinnamon
  • 1 teaspoon salt

  • 1 large egg room temperature
  • 3/4 cup milk
  • 3 tablespoons canola oil
  • 1/4 cup chopped dried apples or cranberries optional

Equipment

  • mixing bowl
  • whisk
  • mason jars
  • skillet

Directions

Buttermilk version
  1. Mix all the dry ingredients together thoroughly and keep in a large container.
  2. For one batch, whisk together the egg, oil, water and 1 1/2 c. mix. Small lumps are fine.
  3. Pour 1/4-cup portions onto a hot, greased griddle and flip when bubbles on top start to pop; cook until both sides are golden. For waffles, cook in a hot waffle iron as its directions say.
Cinnamon version
  1. Mix the five dry ingredients and move them to a 1-quart jar with a tight-fitting lid. Close and keep in a cool, dry place for up to 6 months.
  2. For one batch, measure 1-1/2 cups of the mix into a large bowl.
  3. In another bowl, whisk the egg, milk and oil, and add the dried fruit if using.
  4. Pour the wet mixture over the dry mix and stir just until it is moistened.
  5. Grease a hot griddle and pour on the batter in 1/4-cup portions. Flip when the bubbles on top start to pop; cook until the second side is golden brown.

Notes

Buttermilk version: the mix keeps on the shelf for many months, or up to one year in the freezer. No buttermilk powder: replace half of the 1 c. water with liquid buttermilk. Whole wheat: use half whole wheat and half all-purpose flour, or all whole wheat. Safety: buttermilk powder is a dairy powder and can go stale or rancid over long shelf storage; keep airtight and cool, or freeze.
