Ingredients

For the gift jar
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup yellow cornmeal stone-ground
  • ¾ cup granulated sugar
  • ¼ cup dried cherries or cranberries
  • ½ cup pistachios shelled
  • ½ cup unsweetened shredded coconut
To bake
  • 2 eggs
  • 6 tablespoons olive oil
  • Zest of 1 small lemon

Equipment

  • mason jars
  • mixing bowl
  • whisk
  • baking sheet

Directions

  1. Whisk the flour, baking powder and salt together in a small bowl and put it in a large mason jar (at least 1 quart). Add the cornmeal, sugar, dried cherries, pistachios and shredded coconut on top in layers. Close the jar and attach the baking instructions.

Notes

Heat the oven to 350°F and line a baking sheet with parchment. Empty the jar into a large bowl. Whisk the eggs, olive oil and lemon zest in a medium bowl, add to the dry ingredients and stir thoroughly. Shape and pat the dough into a log about 14 by 4 inches on the sheet. Bake 30 to 35 minutes, until golden brown and set; cool completely. Lower the oven to 325°F. Slice the log diagonally into ½-inch slices with a serrated knife, lay them cut side down at least ½ inch apart on a parchment-lined sheet, and bake 15 to 20 minutes, rotating the sheet and flipping halfway, until golden around the edges. Cool completely. Prep 15 minutes, cook 45 minutes. Safety: pistachios, coconut and stone-ground cornmeal go rancid, so give the jar a short use-by date and store it cool.
