Ingredients

  • 1 cup quick-cook red beans
  • 1 cup quick-cook black beans
  • 1 cup white rice
  • 1/2 cup cheese powder
  • 1/4 cup tomato powder
  • 1 tablespoon taco seasoning
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 cup dehydrated minced onion
  • 1/2 cup bell peppers
  • 1 bay leaf

Equipment

  • mason jars
  • 9×13-inch pan

Directions

  1. Pour the dry ingredients into a clean wide-mouth quart mason jar in the order listed, shaking the jar so they settle.
  2. Set a new lid on the jar. Vacuum seal with a FoodSaver wide-mouth jar attachment, or lay a 100cc oxygen absorber on top of the dry ingredients before sealing (or do both).
  3. Take off the attachment, put on the ring, and tighten it by hand, but not too tight.
  4. Label the jar, add the date, and keep it in a cool, dry place.

Notes

To cook: preheat oven to 350°F. Empty the jar (minus any oxygen packet) into a large casserole dish. Add 6 cups of boiling water. Bake uncovered for 35 minutes.
Storage: shelf-stable up to 10 years with intact seals; shelf life is set by the shortest-lived ingredient, the cheese powder.
Use quick-cook beans, not regular dry beans. If you only have one type of quick-cook bean, double the other.
Safety: cheese powder can go rancid; treat the 10-year figure with caution.
