Ingredients

Dry mix
  • 1 cup long grain white rice
  • ⅓ cup broken vermicelli pasta (or thin spaghetti snapped into small pieces)
  • ¼ cup cheddar cheese powder
  • 2 tablespoons powdered milk
  • 2 tablespoons dried minced onion
  • 2 tablespoons dried broccoli florets lightly crushed
  • 1 tablespoon chicken bouillon granules (or vegetable bouillon)
  • 1 teaspoon parsley flakes
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Equipment

  • pint jars
  • skillet

Directions

  1. Mix the dry ingredients in a pint jar and close it.

Notes

To cook: melt 2 tablespoons butter in a medium skillet over medium heat. Add the jar and toast 2 to 3 minutes until the pasta browns. Stir in 2½ cups water (or 2 cups water plus ½ cup milk). Bring to a boil, reduce to low, cover, simmer 15 to 20 minutes until tender. Fluff, cover again, rest 5 minutes.
Storage: dry mix keeps 3 to 4 months in a sealed jar in a cool, dry place. Gift note: tell recipients they’ll need butter and water (or water and milk).
Safety: cheese and milk powders shorten shelf life.
