Ingredients

Filling
  • 3-4 tablespoons cooked chicken
  • 2 tablespoons frozen peas and carrots
  • 1 ½ teaspoons cornflour (cornstarch)
  • Salt and pepper
  • 3 tablespoons chicken stock
  • 1 tablespoon full fat milk or cream
Biscuit topping
  • 4 tablespoons flour
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • ½ tablespoon (1/4 oz / 9g) butter cubed
  • 3½ tablespoons milk (or buttermilk)
  • 1 tablespoon chopped herbs

Equipment

  • mug
  • mixing bowl

Directions

  1. In a large microwave-safe mug, stir together the chicken, vegetables, cornflour, salt and pepper until the cornflour is evenly distributed.
  2. Pour in the stock and milk, stir, and set aside.
  3. Mix the flour, baking powder and salt in a separate bowl.
  4. Use a fork to work the cubed butter into the dry mix until it resembles fine breadcrumbs.
  5. Add the milk and herbs and stir to make a batter.
  6. Spoon the batter on top of the chicken filling (it may sink a little, but it rises as it cooks).
  7. Microwave about 2 minutes to 2 minutes 15 seconds, until the topping is firm and there is no wet batter left (timing is for a 1200W microwave).
  8. Serve warm.

Notes

The topping batter can be mixed the night before (refrigerate) and microwaved later. Stock gives more flavor than broth. Cooked chicken must be refrigerated until use.
