Ingredients

In the jar
  • 1/4 cup red beans
  • 3/4 cup dehydrated vegetable mix
  • 1/4 cup pot barley
  • 1/4 cup wild rice
  • 1/4 cup orzo (optional)
  • 1/4 cup black beans
Spice packet
  • 1/4 cup vegetable bouillon
  • 1 Tbsp onion flakes
  • 1/2 Tbsp parsley flakes
  • 1 tsp thyme
To cook, you also need
  • one 14 oz can diced tomatoes

Equipment

  • pint jars
  • zip-top bags
  • stockpot

Directions

  1. Put the first six ingredients into the jar in layers.
  2. Mix the spices and bouillon in a separate small bag or wrapped container, set it on top of the beans, and seal the jar.

Notes

To cook: rinse the beans and grains; add to a pot with the spice packet and 7 cups water. Bring to a boil and keep boiling 10 minutes (this deactivates toxins in kidney-type beans). Lower heat, add the tomatoes, and simmer covered 1 to 1.5 hours until beans are tender. Adjust seasoning; garnish with parsley.
