Ingredients

  • 1/2 cup dried porcini mushrooms (about 1/2 ounce)
  • 3 1/2 cups low-sodium chicken broth plus more if needed
  • 1 large shallot finely diced (about 1/3 cup)
  • 2 cloves garlic minced
  • 4 ounces cremini mushrooms stemmed and sliced 1/4 inch thick
  • 4 ounces shiitake mushrooms stemmed and sliced 1/4 inch thick
  • 4 tablespoons unsalted butter divided
  • Kosher salt
  • 1 1/4 cups Arborio rice
  • 1/3 cup dry white wine
  • 1 sprig fresh thyme
  • 1/4 cup grated Parmesan plus more for garnish
  • 1 tablespoon chopped fresh parsley

Equipment

  • microwave-safe bowl
  • cutting board
  • chef’s knife

Directions

  1. Put the porcini and 1 cup of the broth in the measuring cup. Microwave uncovered on high until hot but not boiling (1 1/2 minutes at 1,100 watts or 2 1/2 minutes at 700 watts). Let steep for 5 minutes. Lift out the porcini, squeeze them dry, and chop. Keep the porcini and the soaking liquid apart, and leave the grit at the bottom behind.
  2. Put the shallot, garlic, both mushrooms, 2 tablespoons butter and 1/4 teaspoon salt in the baking dish. Cover tightly with plastic wrap that has a vent. Microwave on high until soft (5 minutes at 1,100 watts or 9 minutes at 700 watts). Be careful of the steam. If needed, stir and microwave in 30-second bursts.
  3. Stir in the rice until coated. Add the wine, 1 1/2 cups of the remaining broth, the porcini liquid, chopped porcini, thyme and 1/2 teaspoon salt. Cover and microwave on high for 8 minutes at 1,100 watts or 10 minutes at 700 watts. Stir, then add the last 1 cup broth. Cover and microwave on high until the rice is nearly tender but still has a slight bite (9 minutes at 1,100 watts or 15 minutes at 700 watts).
  4. Stir in the remaining 2 tablespoons butter, the Parmesan and parsley until creamy (thick but still pourable; add more broth if it is too stiff). Cover and rest for 2 minutes, then serve with extra Parmesan on top.
