Ingredients

Dry mix
  • 2 cups Homemade Quick Mix
  • 1/2 teaspoon baking soda
  • 1/4 cup sugar
  • 1/4 cup cocoa
Add when cooking
  • 2 eggs
  • 1 cup buttermilk or sour milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon melted butter

Equipment

  • hand mixer
  • zip-top bags

Directions

  1. Put the quick mix, baking soda, sugar, and cocoa into a jar, zip-top bag, or vacuum-seal bag.
  2. Store the cooking directions along with the mix.
  3. When you are ready to cook, beat the eggs with a hand mixer until they turn frothy.
  4. Stir in the buttermilk or sour milk, vanilla, and melted butter until just blended.
  5. Add the dry mix and keep mixing until only a few small lumps are left; the batter does not need to be perfectly smooth.
  6. Pour the batter onto the middle of a hot waffle iron.
  7. Cook following your waffle iron’s directions, until the waffle is done and lightly crisp.

Notes

Prep 10 minutes, cook 12 minutes, total 22 minutes. Dry mix: airtight in a cool, dry pantry up to 3 months. Cooked waffles: cool completely, refrigerate covered up to 3 days; reheat in toaster or oven. Freeze fully cooled waffles up to 2 months. Make the Homemade Quick Mix first; the dry waffle mix keeps as long as that mix does.
