  • 3/4 cup powdered milk
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking soda

  • Melted butter or vegetable oil for brushing
  • Favorite mix-ins optional

Directions

  1. Put all the dry mix ingredients in a resealable container and shake to blend.
  2. Build a campfire and let it settle to medium-low heat; set a grill grate 4 to 5 inches above the flames.
  3. For each batch, stir 1 cup mix and 3/4 cup water together in a bowl; leave a few lumps.
  4. Brush a nonstick or cast-iron skillet with butter or oil and set it on the grate. Pour out 4- to 5-inch pancakes.
  5. Cook until the edges look set and bubbly, about 2 minutes; add mix-ins before flipping.
