Ingredients

  • ½ cup old-fashioned rolled oats
  • 1 teaspoon chia seeds
  • 1 Tablespoon vanilla protein powder
  • ½–1 teaspoon lemon zest
  • ¼ cup full-fat plain Greek yogurt or vegan yogurt
  • ¾ cup non-dairy milk such as almond milk
  • pinch of salt
  • ½ teaspoon maple syrup
  • ¼ cup blueberries plus more for topping
  • Toppings of choice: granola, blueberries, nut butter

Equipment

  • mason jars

Directions

  1. Put the oats, milk, yogurt, protein powder, maple syrup, chia seeds, blueberries, lemon zest, and salt in a jar or lidded container and stir.
  2. Chill overnight; if you are short on time, soaking for 2–4 hours will do.
  3. The next morning, give it a good stir. If it is too thick, loosen it with a little more milk. Add toppings and eat from the jar or a bowl.
