Ingredients

  • 2/3 cup flour
  • 3 1/2 cups minced dry onions
  • 1 1/4 to 2 cups chili powder
  • 3 Tbsp salt
  • 2 Tbsp cumin
  • 1/2 cup dried minced garlic
  • Red pepper flakes to taste
  • 3 Tbsp oregano

Equipment

  • mixing bowl
  • airtight jar

Directions

  1. Stir all the dry ingredients together in a large bowl until well blended.
  2. Pour into an airtight container or jar and label it.
  3. Shake or stir before each use, since the flour and finer spices settle.
  4. To make chili, put the following in a crockpot: 2 (28-ounce) cans crushed tomatoes, 1/2 cup chili seasoning mix, 1/2 to 1 pound cooked ground beef, 5 to 6 cups cooked beans, and 1 chopped onion.
  5. Cook until hot and well blended.

Notes

Use 1/2 cup mix for each batch of chili. Store the dry mix airtight in a cool, dark, dry cupboard for up to 6 months, away from heat and steam. Refrigerate cooked chili within 2 hours and use it within 3 to 4 days, or freeze it.
