Ingredients

  • 1 cup old fashioned rolled oats (not instant)
  • 1 1/2 cups unsweetened almond milk
  • 4 Tablespoons vanilla protein powder
  • ½ cup fresh blueberries plus more for topping
  • ½ Tablespoon chia seeds
  • 1 teaspoon vanilla
Crumble topping
  • 1 1/2 Tablespoons old fashioned oats
  • 1 Tablespoon oat flour
  • 1 Tablespoon coconut sugar (cane sugar also works)
  • ½ Tablespoon coconut oil melted
  • 1 Tablespoon sliced almonds
  • ¼ teaspoon cinnamon

Equipment

  • mixing bowl
  • airtight jar

Directions

  1. Combine the oats, almond milk, protein powder, blueberries, chia seeds, and vanilla in a container, stir well, close it, and chill overnight.
  2. Stir the crumble ingredients together in a small bowl and set aside (this can be made the night before too).
  3. In the morning, stir the oats; add a little more almond milk if needed, because the oats, protein powder, and chia soak up a lot of liquid.
  4. Split between two containers and add crumble and a few more blueberries to each. Finish with a drizzle of almond butter.

Notes

Airtight in the fridge up to 5 days; best within 1 to 3 days. Can be reheated in the microwave in 30-second intervals.
