Ingredients

  • ½ cup steel cut oats
  • 2 cups water
  • Pinch of sea salt
  • Toppings of your choice

Equipment

  • saucepan
  • airtight jar

Directions

  1. Put the oats, water, and salt in a saucepan and bring to a boil, keeping a close eye so it does not boil over. Turn down the heat and simmer for 1 minute, then take it off the heat and let it cool.
  2. Transfer the oats to a container with a lid and chill overnight.
  3. The next morning, spoon the oats into jars or bowls.
  4. Add toppings and eat cold.

Notes

Airtight in the refrigerator up to 5 days; oats keep softening, so best in the first few days. Stir in a splash of milk if too thick. Note: this method briefly boils the oats before chilling.
