Ingredients
- 5 tablespoons rice (quick cooking)
- ⅔ cup (5oz/150g) cold water
- 2 broccoli florets (finely chopped)
- ½ teaspoon cornstarch (corn flour)
- 3 tablespoons milk
- 4 tablespoons grated cheddar
- Salt to taste
Equipment
- microwave-safe bowl
- mug
Directions
- Put the rice, broccoli and cold water in a very large microwavable bowl or mug. Cover with a plate.
- Microwave 3½ to 4 minutes, staying close by because the water can boil over.
- Mix in the cornstarch, milk, grated cheese and a pinch of salt.
- Microwave about 1 minute 30 seconds longer to heat it through and thicken it with the cornstarch.
- Serve warm.
Notes
Ingredients can be mixed in advance (refrigerate, since it contains fresh broccoli and dairy). Times depend on microwave and mug size.
