Burnt food on stainless steel pans

Let the pan cool first, and skip the steel wool.

  1. Try this first

    Baking soda paste

Scrape out the loose bits. Mix baking soda with a little water into a thick paste, about 3 parts baking soda to 1 part water, and spread it on the burn, thickest on the crust. Leave it a few minutes for a small mark, or a few hours or overnight for heavy char. Then scrub with a nylon brush or non-scratch sponge.

Let a hot pan cool before it touches water: cold water on hot metal can warp it. Do not use steel wool, chlorine bleach or oven cleaner on stainless steel.

  2. Then try

    Simmer, then baking soda

Scrape out what you can. Cover the bottom with water, or equal parts water and white vinegar, and bring it to a simmer for a few minutes, scraping the bottom as it loosens. Pour it out without wiping, coat the bottom with baking soda, let it cool and scrub.

Mind the heat and the fizzing: do the baking soda step in the sink.

  3. Then try

Nonstick pans: paste and a soft sponge

Cover the bottom with a thin layer of warm water, sprinkle baking soda over it to make a paste and let it rest several hours or overnight. Scrub with a non-scratch sponge.

No metal tools or abrasive pads on nonstick. Keep soap and acids away from cast iron.
